The company’s flagship, which is only born in special and exceptional years: this is Pas Dosé Riserva. In fact, wine is not produced at every harvest. The winemaker Elisabetta patiently awaits the well-deserved vintage, endowed with a quality and delicacy that can give life to this important Franciacorta. 10% of the selected must is fermented in barrique and left there for at least three months in a noble bâtonnage; then, after the second fermentation, it undergoes a long refining lasting 60 to 72 months.
