The Sauvignoni wines prefer ventilated areas with calcareous soils, such as the steep slopes of the Cortaccia between 450 and 600 meters away. The evening descending winds regulate the climate and refresh the grapes. On deep, gravelly, calcareous-dolomite soils, a kind of delicate Sauvignon is born with strong fruits that produce elderberry, gooseberry and exotic fruits. It tastes balanced and juicy. Vibrant acidity gives the body a distinct profile. One of the features of the Sauvignon Selection is the salty note in the mouth, which gives the wine an elegant finish.
